Abstract :In this study the drying characteristics of potato which is grown Niğde region for different air temperature and pre-treatments were determined. In the trials, air temperatures as 60 0C, 70 0C, 80 0C and air velocities as 2.0 m/s were taken. Potato samples that cut at dimensions 20x10x4 mm, 12.5x12.5x12.5 mm and 25x12.5x12.5 were dried.. In the trials result, drying coefficient insert ignore into journalissuearticles values(k); values for samples of potato were found 1,959…3.691 insert ignore into journalissuearticles values(20x10x4 mm);; 0,791…1.232 insert ignore into journalissuearticles values(12.5x12.5x12.5 mm);; 0,573…0,854 insert ignore into journalissuearticles values(25x12.5x12.5 mm); respectively.
