Antioxidant Effects of Combinations of Extracts and Essential Oils from Turkish Spices with Τeνοx 4 (BHA+BHT) and Citric Acid on Sunflower Oil

Abstract :Antioxidant effects of combinations (0.2% totally) of nine methanol extracts and five essential oils from Turkish spices with Tenox 4 (BHA+BHT) and citric acid (CA) were evaluated on sunflower oil stored at 60°C by measuring peroxide values in regular intervals. All the terrnary combinations of extracts, on seventh day of storage, were found to be effective according to control. Except for the dual combinations of sumac and black thyme with CA, all the dual combinations were found to be effective compared with control. After seventh day of storage, the dual and ternary combinations of extracts were found to be noneffective according to commercial additives. On twenty eighth day of storage, only Tenox 4 were found to be noneffective according to the dual and ternary combinations of extracts. The dual and ternary combinations of extracts and/or essential oils with Tenox 4 and CA showed an additive antioxidant effect. But all of combinations were found to be none effective compared with commercial additives. The dual combinations of rosemary essential oils with T4 and the ternary combinations of savory showed the highest effects on seventh day of storage. Except for T4, the dual and ternary combinations of essential oils were found to be less effective according to commercial additives along storage.
