Abstract :Makalede, Türkiye\\\'deki zeytinyağı endüstrisinin teknik sorunları ele alınmaktadır. Öncelikle endüstrinin tarihçesi kısaca incelenmekte ve ardından endüstrinin zeytin ağacı sapı aşamasındaki teknik sorunları ele alınmaktadır: yıkama ve temizleme, pazarlama, işleme, yağ ayırma ve yağ depolama.
