Abstract :Bu çalışmada taze sıkılmış nar suyu, ticari nar suyu ve nar suyu konsantresi içeceklerinde beş fenolik asit, gallik, klorojenik, kafeik, p-kumarik ve ferulik asit tespit edilmiştir. Bu amaçla, nar suyu seralarda fenolik asidin karakterizasyonu ve kantifikasyonu için, yüksek performanslı sıvı kromatografisi (HPLC) kullanan, fotodiyot dizi tespiti (DAD) kombinasyonlu analitik bir yöntem geliştirildi. Sonra nar suyu analizleri yapıldı. Tek tek bileşiklerin saptama limiti, gallik asit 0.1 mg / L, klorojenik asit 0.01 mg / L, kafeik asit 0.03 mg / L, p-kumarik asit 0.02 mg / L ve ferulik asit 0.04'tür (LOD, S / N = mg / L'dir. Bireysel bileşiklerin nicelik sınırı 0.4 mg / L gallik asit, klorojenik asit 0.05 mg / L, kafeik asit 0.1 mg / L, p-kumar asit 0.1 mg / L ve ferulik asit 0.1'dir (LOQ, S / N = 10) mg / L'dir. Ticari nar suyu içindeki bağıl standart sapma (% RSD), galli k asit% 0.08, klorojenik asit% 0.32, kafeik asit% 0.21, p-kumar asit% 0.08 ve ferulik asit% 0.38 olarak bulundu. Taze sıkılmış nar suyundaki göreli standart sapma (% RSD), gallik asit% 0.01, klorojenik asit% 0.46, kafeik asit% 0.17, p-kumarik asit% 0.04 ve ferulik asit% 0.8 olarak bulundu. Nar konsantresi suyundaki göreli standart sapma (% RSD), gallik asit% 0.78, klorojenik asit% 0.25, kafeik asit% 0.49, p-kumar asit% 0.36 ve ferulik asit% 0.17 olarak bulundu.
