Abstract :The objective of this study was to analyze the behavior and attitudes of bread consumers in Turkey in the province of Adana. The surveys were carried out in a simple random fashion among 100 households in the city center of Adana province according to social class. Analysis of the data collected shows that the behavior and attitudes of bread consumers in the province of Adana have changed over time not only in terms of quantity, types of bread and places of purchase. This change in behavior and attitudes is influenced by socio-economic and demographic characteristics such as education, occupation, household size, social class and monthly income of consumers. The increase in the unit selling price of bread significantly influences consumer behavior and attitudes. In a context where bread represents a basic foodstuff for a large part of the population, it is therefore important to develop policies so that bread is accessible to all.
