Abstract :Şarapta biyojen aminler, bakteriyel aktivite sonucu serbest aminoasitlerden meydana gelmektedir. Yaşamsal faaliyetlerde pek çok fonksiyona sahip olan biyojen aminler yüksek miktarda alındığında, organizmada istenmeyen etkilere sebep olmaktadır. Biyojen aminlerin uzun yıllar peynir, balık ve et gibi gıdalarda bulundukları düşünülmüş, ancak yapılan araştırmalarda şarap ve bira gibi fermente içeceklerde de bulunduğu ortaya konulmuştur. Bu derlemede şarapta biyojen aminlerin oluşumu ve sınırlayıcı faktörler üzerinde durulacaktır.
