Its excellent storage stability against environmental factors makes it more desirable, particularly in the context of the food business. In this study, based on the research on turmeric, curcumin, and its starch, the molecular mechanisms and pharmacological properties underlying its use in various diseases such as anti-inflammatory, anti-diabetic, antioxidant, anti-obesity, cardio-liver, anti-cancer, anti-arthritis. And its effects on metabolism. In addition to the lack of sufficient studies, it has been argued that its use in the food and pharmaceutical industry is promising when the results of the research are examined.
