Milk Yield Characteristics of Anatolian Water Buffalo in Osmaniye Province

Abstract :This study examines the milk yield characteristics and fatty acid composition of Anatolian Water Buffaloes raised by local farmers in Osmaniye province. Water Buffalo milk has a high fat content (6.84%) and protein content (4.55%), with a lactose level of 4.35% and a pH of 6.76. Fatty acid analysis indicates that saturated fatty acids (SFA) dominate, with palmitic acid (35.91%) being the most abundant. Among monounsaturated fatty acids, oleic acid (24.61%) is the highest, while polyunsaturated fatty acids include linoleic (0.52%) and alpha-linolenic acid (0.91%) as key components. In conclusion, Water Buffalo milk from Osmaniye is a valuable resource for regional dairy production due to its rich nutritional content.Keywords : Water Buffalo milk, milk yield, fatty acids, nutritional composition, Osmaniye
