Abstract :Tekstür, besinlerin yapısal, mekanik ve yüzey özelliklerinin, görme, işitme, dokunma ve kinestetik yol ile belirlendiği bir kalite kriteridir. Tekstürel özellikler mekanik ve geometrik özellikler olarak sınıflandırılır. Besinlerin tekstürü, objektif ve subjektif metotlar ile ölçülür. Besinlerin tekstürünün subjektif ve objektif değerlendirilmesi tekstür ve tat arasındaki ilişkiyi tanımlayan reolojik modele dayanmaktadır
