Determination of Current Condition and Some Production Features of Dairy Processing Facilities in the Region of Kars

Abstract :Bu çalışma Kars İlinde bulunan süt işleme tesislerinin mevcut durumları; üretim kapasiteleri ve pazarlama olanakları, çiğ süt temini, soğuk zincir ve yat seviyesi ile ilgili problemlerini tespit etme ve çözüm önerileri sunma amacıyla yapılmıştır. Çalışmada kullanılan veriler, Kars ilinde üretilen sütün % 40’ının işlendiği Kars Organize Sanayi Bölgesinde faaliyet gösteren 21 adet süt işleme tesisinden tam sayım yöntemine göre elde edilmiştir. Çalışma sonucunda işletmelerin % 11 kapasite ile çalışarak, ortalama 18 ton/gün süt işledikleri, en yüksek süt alım yatının soğuk zincirden elde edilen süte ödendiği (0.80 TL Lt -1 ), tesislerin çoğunluğunda (% 95) hijyen açısından önemli olan krom süt taşıma ve depolama araçlarının bulunduğu, % 71’inin ambalajlama ünitesi olduğu, % 81’inin HACCP, ISO ve TSE belgelerine sahip oldukları ve pazarlama problemlerinin olmadığı belirlenmiştir. Süt işleme tesislerinin üreticilerden beklentileri hijyen, soğuk süt üretimi ve hayvan sayısının arttırılması, devletten beklentileri ise önem sırasına göre, soğuk süt üretimine ve süt sığırcılığına destek verilmesi (% 52.4), üreticilere süt üretimi konusunda eğitim verilmesi (% 28.6) ve kayıt dışı üretimle mücadeledir (% 19.0).
