Abstract :The article provides a scientific analysis of the historical emergence, formation, and developmental stages of perfumery. The production and use of fragrances, originating in ancient Eastern civilizations, have played a significant role across different eras, both in religious-spiritual rituals and in daily life. In antiquity, the art of perfumery was regarded as an expression of human aesthetic perception, while during the Middle Ages it was also widely employed for medical and hygienic purposes. With the rise of industrialization in the nineteenth century, perfumery emerged as an independent field of production, closely linked to the achievements of chemistry. The article also examines the historical roots and developmental phases of perfumery in Azerbaijan, the role of fragrance traditions in national culture, and the current state of the perfumery industry in modern times. By the twentieth century, and particularly in the contemporary period, this field had evolved into a significant segment of the global economy, generating billions in international market turnover. Furthermore, the study explores the cultural, social, and economic specificities of perfumery, highlights ecological and ethical challenges, and advances scholarly conclusions regarding its future development prospects.Keywords : Parfümeri, Koku Tarihi, Kimya, Endüstriyel Üretim, Azerbaycan’da Parfümeri Kültürü
