Abstract :Bu derleme çalışmasında, öncelikle yağ asitlerinin genel yapısı anlatılmıştır. Daha sonra esansiyel yağ asitlerinin insan metabolizması ve beslenmesi üzerindeki olumlu etkileri tanıtılmıştır. Bu derleme çalışmasında, yağ asitlerinin genel yapısı anlatılmıştır. Doymuş yağ asitleri, tekli doymamış yağ asitleri ve çoklu doymamış yağ asitlerinin yapıları tanıtılmıştır. Eikosapentaenoik Asit (EPA), Dekosapentaenoik Asit (DPA) ve Dekosahegzaenoik Asit (DHA)'ın bulunduğu besinler tanımlanmıştır. Daha sonra esansiyel yağ asitlerinin insan metabolizması ve beslenmesi üzerindeki olumlu etkileri tanıtılmıştır
