Yenebilen ve Ekonomik Değeri Olan (Ramaria flavobrunnescens = Gelinparmağı Mantarı)'nın Vitamin C, E ve Yağ Asidi Bileşenlerinin Belirlenmesi

Abstract :Araştırma, ticari öneme sahip makromantarlardan Ramaria flavobrunnescens 'in taze ve kurutulmuş örneklerinde Vitamin C, E, ve yağ asidi bileşenlerinin belirlenmesi amacıyla yürütülmüştür. Vitamin C ve E miktarları HPLC ile analiz edilmiştir. Vitamin C miktarı taze örneklerde 186 mg/kg, kurutulmuş örneklerde 7,2 mg/kg olarak bulunmuştur. Yağ asidi bileşenleri, yağ asidi metil esterleri oluşturulduktan sonra Alev İyonlaştırma Detektörü'lü (FID) gaz kromatografisi (GC) cihazı ile analiz edilmiştir. Yağ asidi bileşenleri, taze ve kuru örneklerde yüzde olarak sırasıyla şu şekilde bulunmuştur; linoleik asit: %22,7- %21,4; oleik asit %44,8- % 48,9; palmitik asit %11,8- %8,8. Anahtar kelimeler: Ramaria flavobrunnescens, vitamin C, E, yağ asitleri   Determination of Vitamins C, E and Fatty Acid Composition in Edible and Economically Important Macrofungi, ( Ramaria flavobrunnescens= Gelinparmağı Mantarı))   ABSTRACT: This study was conducted to determine vitamins C, E and fatty acid composition in a commercially important macrofungi, Ramaria flavobrunnescens . Amount of vitamin C and E were determined by HPLC. The The ratio of Vitamin C was 186 mg/kg and 7.2 mg/kg in fresh and dried samples, respectively. Fatty acid compositions were analyzed by Gas chromatography (GC) equipped with Flame Ionization Detector (FID) after formations of methyl esters. Fatty acid composition percentages for each fresh and dried samples were 22.7%-21.4%; 44.8%- 48.9%; and 11.8%-8.8% for linoleic acid, oleic acid, and palmitic acid, respectively.
