Abstract :Kımız, Orta Asya kökenli, kısrak sütünden yapılan, laktik asit ve etil alkol fermentasyonu sonucu oluşan fermente bir süt ürünüdür. Kısrak sütünün bileşiminde bulunan bazı maddeler ve fermentasyon sonucu oluşan ürünler, kımıza sadece bir süt içeceği değil aynı zamanda bir çok hastalığın ilacı olma özelliğini de kazandırmaktadır
