Abstract :Food safety is a critical concern for modern society. In order to ensure that the food sold to customers is safe, authorities around the world impose restrictions and make new legal arrangements. To protect both consumers and manufacturers, it is essential to continuously track the food production and processing, and to get fast and reliable results. Rapid test methods, including biosensors, play a vital role in this process. Biosensors, offer a range of benefits when used in food safety and quality applications. However, they also have some limitations and challenges. This review aims to explore the use of biosensors in food safety and quality, and to discuss the advantages, disadvantages, and potential of these technologies.
