Abstract :Su aktivitesi, stabil bir ürün için gerekli olan kritik noktanın belirlenmesi ve gıdalardaki mikrobiyal ve kimyasal bozulmanın tahmin edilmesinde önemli bir parametre olarak kullanılmaktadır. Ayrıca gıdaların işlenmesi ve depolanması açısından da önemli bir role sahiptir. Bu derlemede, gıdalardaki su aktivitesinin kontrolü, ayarlama yöntemleri ve belirlenmesinde kullanılan deneysel ve teorik yöntemler incelenmiştir.
