Abstract :Gıda maddelerinde kalitenin bozunma hızı, gıdayı çevreleyen ortamın sıcaklığından, oksijen ve ışık varlığından, havanın bağıl neminden, gıdanın bileşimi ve kullanılan ambalaj malzemesinden etkilenmektedir. Bu çalışmanın amacı gıda bileşenlerinin bozunma kinetiğini yukarıda bahsedilen kriterler açısından özetlemektir.
