Abstract :Oksidatif fermantasyonlar grubundan önemli bir fermantasyon da sitrik asit fermantasyonudur. Bugün teknikte sitrik asit biyolojik yolla elde edilmektedir. Bu amaçla mikroorganizma olarak küf mantarları kullanılır. Birçok küf mantarı sitrik asit oluşturdukları halde Aspergillus niger’in suşları tercih edilir.
