Abstract :Süt proteinleri besinsel, fonksiyonel ve biyolojik aktiviteye sahiptir. Biyoaktif peptitler süt proteinlerin hidrolize olması ile açığa çıkar ve süt proteinlerinin aminoasit dizilimi içinde yer alır. Biyoaktif peptitlerin oluşumu; sütte doğal olarak bulunan, laktik asit bakterileri tarafından üretilen ya da dışarıdan katılan proteolitik enzimlerle gerçekleşmektedir. Bu makalede biyoaktif peptitlerin oluşum şekilleri ve sağlık üzerine etkileri hakkında bilgi verilmiştir.
