Abstract :Gıda sistemlerinin su aktivitesi hesaplamaları 0.95 su aktivitesindeki insert ignore into journalissuearticles values(Lang ve Steinberg, 1981a);. Smith izotermlerine kütle denge eşitliklerinin uygulanmasıyla daha da genişletilmiştir insert ignore into journalissuearticles values(Chinachoti, 1990);. Daha büyük su aktivitelerinde benzer hesaplamalar, Smith izoterminin lineer olmayışından ve daha ziyade tuz ve şeker gibi çözeltilerin mevcudiyetinden dolayı kullanışlı değildir insert ignore into journalissuearticles values(Chinachoti ve Steinberg, 1984, 1985, 1986);. Ayrıca orta nemli gıdaların içerdiği su oranlarında kuvvetli elektrolitlerin çok bileşenli sulu çözeltilerinde su aktivitesinin teorik olarak belirlenmesi için bir çalışma yapılmıştır insert ignore into journalissuearticles values(Chirife ve ark., 1980);. Belirli bir nem içeriğindeki kompozisyonu bilinen bir karışımın su aktivitesinin hesaplamak için Smith izotermi ile Lang-Steinberg kütle denge eşitliğinin kombinasyonundan faydalanılarak bir eşitlik türetilmiştir insert ignore into journalissuearticles values(Lang ve Steinberg, 1981);.
