Abstract :Taze işlenmiş etlerin tipik kırmızı rengi; Myoglobin, Hemoglobin ve bunların bileşiklerinden meydana gelir. Taze etlerde ferrous pigmentinin kaynağı Myoglobin’dir. Bu, yeni parçalanan et yüzeyine erguvan kırmızı renkte bir görünüş verir ve atmosfer oksijenine maruz kalmasıyla et, ferrous pigmentinin parlak kırmızı rengini alır ki buna Oksimyoglobin denir.
