Abstract :Tekstür ve tat, peynirin kalitesini belirleyen en önemli iki faktördür. Bu nedenle, peynir teknolojisinde tekstür ve tat yönünden kabul edilebilir bir ürün elde edilmesi, esas amaç olmalıdır. Bunlardan tekstür reolojik bir özellik olup, tanımlanmasında, sertlik, yumuşaklık, ufalanırlık, gözeneklilik gibi terimler kullanılır.
