Abstract :Bu derlemede doğal bitkisel çeşninin genel bir sınıflaması yapılmış, acı çeşniler ayrıca gruplara ayrılmış, acı ve acılık tanımları ile acılığı oluşturan bileşikler kısaca incelenmiş, acı gıda formülasyonlarında kullanılan bitkisel materyal ve etken maddeleri gözden geçirilmiş, acı içecek hazırlanmasında bazı noktalar vurgulanmıştır.
