Abstract :Bu çalışmada, peynir suyu ve lorun bileşimi araştırılmış ve aşağıdaki ortalama değerler bulunmuştur.AnalizlerPeynir suyuLorSu %Kurumadde %Yağ %Kurumadde yağ %Kül %Protein %Laktoz %Asitlik insert ignore into journalissuearticles values(S.H.); 92.70 7.30 0.59 8.12 0.66 1.01 5.04 6.64 72.43 27.57 7.30 23.35 1.12 12.88 7.50 13.65Araştırma sonuçlarına göre süt kurumaddesinin %43, yağın %11.6, mineral maddelerin %63.5, süt şekerinin %78.0 ve proteinin de %23.2 oranında peynir suyuna geçtiği saptanmıştır. Peynir suyundan lora geçen miktarlar ise proteinde %42.9, süt şekerinde %5.0, mineral maddelerde %5.7 ve yağda %41.6 oranında olmuştur.
