Abstract :Glutamik asidin sodyum tuzu olan monosodyum glutamat, gıdalara lezzet vermek amacıyla katılan bir gıda katkı maddesidir. Bu derlemede, monosodyum glutamat’ın kullanılma amacı, toksisitesi ve bu bileşiğin gıdalarla alınmasına bağlı olarak ortaya çıkan idiosenkratik reaksiyonlar açıklanmış ve kullanım güvenirliği değerlendirilmiştir.
