Abstract :Bu araştırma peynirin en önemli aroma maddelerinden olan uçucu serbest yağ asitlerinin Kaşar peynirindeki miktarını tesbit etmek amacıyla gerçekleştirilmiştir. Materyal olarak Erzurum ve Kars İllerinde satılan Kaşar peynirlerinden alınan örnekler kullanılmıştır. Örneklerin 100 gramında ortalama 7.69±0.93 mg asetik asit, 2.72±0.59 mg propiyonik asit, 11.56±1.48 mg bütirik asit, 6.08±0.64 mg kaproik asit, 9.17±1.99 mg kaprilik asit ve 6.96±1.44 mg kaprik asit bulunduğu serbest uçucu yağ asitleri bakımından bazı peynir çeşitleri ile karşılaştırılmıştır.
