Abstract :Biyojenik aminler, bakteriler tarafından dekarboksilasyon yolu ile amino asitlerden oluşmaktadır. Biyojenik aminlere daha çok fermente gıdalarda ve mikrobiyolojik yolla bozulan, amino asitlerce zengin olan gıdalarda rastlanmaktadır. Etlerde biyojenik aminler üzerine yapılan birçok araştırmalarda, Cadaverin ve Putrescin miktarlarının, etin tazeliğini belirlemede indikatör görevi yaptığı tesbit edilmiştir. Bunun yanı sıra, sucuklardaki Histamin içeriğinin, ürünün kalitesi üzerine olan etkisi henüz açıklanamamıştır.
