Abstract :Bu çalışmada; çiğ sütün, ısısal işlem uygulanmış içme sütlerinin, yoğurt koyulaştırılmış ve kurutulmuş süt mamulleri ile dondurma, peynir, krema ve tereyağının soğukta ve özellikle dondurularak depolanmaları incelenmiştir. Bu arada süt ve mamullerinin saklama nedenleri, saklamada ortaya çıkan sorunlar, depolamada dikkat edilecek noktalar ve hangi koşullarda ne kadar süre depolanabilecekleri konuları üzerinde durulmuştur.
