Abstract :Bu araştırmada nar suyu antosiyaninleri üzerine ısıl işlemin ve depolama süresinin etkileri incelenmiştir. Nar suyunda antosiyanin tayini esas olarak pH diferansiyel metodu ile yapılmış ve dominant antosiyaninin cyanidin-3 galaktosid olduğu spektral eğrinin analizinden anlaşılmıştır. Isıl işlemin, nar suyu antosiyaninlerinin degradasyonu üzerine etkili faktör olduğu saptanmıştır. Ayrıca depolama sıcaklık derecesi ve süresi antosiyaninlerin stabilitesi üzerine önemli düzeyde etkide bulunmaktadır.
