Abstract :Duyusal değerlendirme, gıdaların duyusal kalitelerin analizlerinde vazgeçilmez bir yöntem olarak kabul edilmekte, ancak değerlendirmenin sonucuna olan güvensizlik sorun yaratmaktadır. Duyusal değerlendirmede, amacın saptanması ve yöntemler, panel, fiziksel gereksinimler, istatistik değerlendirme sonucu güveni etkileyen en önemli faktörlerdir.
