Abstract :Sorbatların küf ve mayalara etkisi tür ve suşlara göre değişmektedir. Sorbatlar küf ve mayaların gelişmesini, bazı küflerin toksin oluşturmalarını engellemekte veya geciktirmektedir. Bazı maya ve küfler ise sorbatlara karşı direnç göstermekte hatta onları kullanabilmektedir.
