Abstract :Bu çalışmada tümü çiğ ürün olmak üzere 59 kıyma, 34 hamburger ve 75 sucuk örneğinde LST+MUG broth besiyeri kullanılarak EMS yöntemi ile koliform grup bakteriler ve E. coli sayılmış, 255 kıyma, 103 süt, 50 hamburger ve 101 sucuk örneğinden Enterobacteriaceae familyası üyesi 3150 adet bakteri izole edilmiş, bunların 2902 adedi tanımlanmıştır. Araştırma bulgularına göre kıymada 0-2,1X104 EMS/g, hamburgerde 0-1,5X102 EMS/g, sucukta 0-4,6X102 EMS/g koliform grup bakteri olduğu saptanmıştır. E. coli sayıları ise sırası ile 0-4,3X102 ;0-1,5X102 EMS/g; 0-2,4X102 EMS/g şeklindedir. Tanımlaması yapılan bakteriler arasında 1067 adet E. coli tip 1 bulunurken, bunu 707 adet Hafnia alvei, 404 Citrobacter freundii,126 adet Proteus vulgaris ve diğerleri izlemiştir.
