Abstract :Portakal artığının karbon kaynağı olarak kullanıldığı çalkalama kültür çalışmalarında farklı maya kültürlerinin ürümeleri ve protein sentezleri araştırılmış ve test edilen mayalar içersinde Candida utilis en yüksek protein sentezini sağlamıştır. Bu organizma ile %6.8 protein içeren 1 kg kurutulmuş portakal artığından %29.6 protein içeren 625 g kuru biyomas elde edilmiştir.
