Abstract :Proteoliz, fermente sosislerin kalitesine katkıda bulunan temel biyokimyasal reaksiyonlardan biridir. Proteoliz reaksiyonları ürün yapısında doğal olarak bulunan enzimler ya da mikrobiyel orijinli enzimler tarafından katalize edilirler. Et proteinleri önce kas enzimleri tarafından polipeptitlere, daha sonra da peptidazlar vasıtasıyla küçük peptitlere hidrolize olur. Proteolizde son aşama, etin yapısında bulunan ya da bakteriyel orijinli aminopeptidazlar tarafından serbest amino asitlerin oluşmasıdır. Peptitler ve serbest amino asitler, fermente et ürünlerinde protein olmayan azotlu maddelerin temel komponentleridir ve son üründe uçucu ve uçucu olmayan flavor bileşiklerinin oluşumuna katkıda bulunurlar.
