Abstract :Klasik yöntemle hazırlanan elma sularında her bir proses aşamasından önce ve sonra fenolik bileşik kompozisyonu araştırılmıştır. Presleme, filtrasyon insert ignore into journalissuearticles values(kizelgur, kizelgur ve perlit); ve konsantrasyon proseslerindeki fenolik madde kaybı sırasıyla, %10.4, % 4.4, % 8.6 ve % 29.6 olarak belirlenmiştir. Konsantrenin 10 ay depolanması fenolik bileşiklerde en fazla kayıp ile insert ignore into journalissuearticles values(% 33); sonuçlanmıştır.
