Abstract :Günümüzde doğal nişasta üretimi büyük orandı modifiye nişasta üretimine dönüştürülmektedir. Bu makalede, önceden çirişlendirilmiş nişasta asitle inceltilmiş nişasta, çapraz bağlı nişasta dekstrinler, stabilize edilmiş nişasta gibi gıda sanayiinde en çok kullanılan modifiye nişasta türleri, kimyasal tepkimeler baz alınarak incelenmiştir.
