Abstract :Bu derlemede, gıda boyalarının özellikleri, üretim teknolojileri, değişik gıda matrikslerinde bazı uygulama örneklerinin yanısıra, toksikolojik açıdan uluslar arası kuruluşların son değerlendirmeleri üzerine bilgiler ile bu alanda mevcut ulusal ve uluslar arası yasal düzenlemelerin bir perspektifi sunulmaktadır.
