Abstract :Bakteri, fungus ve mayalar fermente et, süt, hububat ürünleri ile meyve ve sebzelerin üretiminde yaygın olarak kullanılmaktadır. Fermente gıdaların üretiminde kullanılan bu mikroorganizmalar üründe arzu edilen tat ve aroma, tekstür ve sindirilebilme özelliğini arttırmaları yanında gıdaları bozucu mikroorganizmaların gelişmelerini önleyerek gıdalarda koruyucu olarak da rol oynamaktadır.
