Abstract :Laktoperoksidaz-tiyosiyanat-hidrojen peroksit sistemi buzdolabı sıcaklığında gelişen psikrotrof bakterilerle oda sıcaklığı ve üzerindeki derecelerde gelişerek sütü bozan bakterilere karşı doğal koruyucu bir sistemdir. Bu sistem Gram negatif bakterilere karşı öldürücü ve gelişimi engelleyici, Gram pozitif bakterilere karşı da gelişimi engelleyici bir etki sergilemektedir. Bu sistemle mikroorganizma yükü en fazla 104 adet/m l olan sütler, 10-20 ppm tiyosiyanat ve 10-20 ppm hidrojen peroksit ilavesiyle, oda sıcaklığını geçmeyen sıcaklık derecelerinde muhafaza edildiği takdirde 15 saate kadar nitelikleri bozulmadan korunabilmektedir.
