Abstract :ÖZET Bu çalışmadaornekfertleki uçucu yağ asit/erini miktar bakımındanasgari kayıp/ada elde edebilmek ~çin, ana/iz nuuideleri fark/i miktarlarda alınmış ve değişik yontem/er uygulanmıştır. Sonuç olarak 1gr. peynil', asit/endirildikten sonra dolgu maddesi Silicie asit olan kolonda bütanolun kloroform içindeki % l'lik eriğiyi ile yıkanarak yağ asitleri peynirden ayırdedilmiştir. 'Eldeedilen asitler dekanoıla esterleştirilip, ince tabaka kromatografisi ile asit esterleri saf halde ayrılmıştır. pıakalardan kazman madde içindeki asitesterleri % 100 ether eriyiği ile yıkanarak, 5 ml. lik cambalon içinde toplanmqtır. Buradan alınan 3 mikroiitre' gazkromatografisine enjekte edilmiş, ornek/eki miktarları geri alma oranları Asetik- asit esteri için% 87, Propionik asit esteri için %92, Tereyağ asiti esteri içinYa 87 Valerik asit esteri için de%85 olarak saptanmıştır. A STUDY ON THE DETERMİNATİON METHODS OF THE SHORT CHAİN FATTY ACİDS İN RİPENİN CHEESES İn this research determination of the short chain fatty cacids of ripening cheesees by means of gas cmomadography was eveluated. , First,' Short chain fatty acidsare ısolated by use 9f column and thin layer chromatography. The column preparation and 'seperation of fatty acids are examiııated in official methods of Analysis of The Association of official Analytkil chemists page 3i 3-3 15. ~econd, eluted compounds of the fatty acids are seperated on thin layer plates. Then, the short chain fatty acids are scraped of from the plates and washed by using %100 the ethylether. The ether solution is evaporated down to 5 ml. volum. Mter that, 3 ml of the short chain fatty acids esters are injected in to gas chromatography. The recovery rations for decanol acetate, decanol propionate, decanol butyrate and decanol valerate are 87%, % 92, , % 87, % 8-5 respectively.
