Abstract :Meyve ve sebzelerin kurutma yoluyla muhafaza ve saklanmaları, eski çağlardan beri bilinen ve uygulanan bir yöntemdir. Önceleri Güneş enerjisi bu amaçla kullanılmış, bugün ise teknolojik gelişmeye uyarak, modern ve yüksek kapasiteli kurutma sistemleri geliştirilmiştir. Yurdumuzda son 5-6 yılda büyük gelişmeler gösteren Meyve Sebze İşletme Sanayii bazı kollarında teknolojik bir aşama yapma dönemine girmiş bulunmaktadır. Bunlardan biride kurutarak işleme tekniğidir.
