Effect of Perceived Food Literacy on Eating Behavior Pattern, Glycemic Parameters, and Lipid Profile in Patients with Type 2 Diabetes: Structural Equation Modeling

Abstract :Aim: To evaluate the effect of perceived food literacy on eating behavior patterns, glycemic parameters, and lipid profiles in patients with type 2 diabetes. Material and Methods: A descriptive and correlational study design was used. This study included 240 patients with type 2 diabetes. Patient Information Form, Self-Perceived Food Literacy Scale, and Eating Behavior Patterns Questionnaire were used in the study. Data were analyzed using descriptive statistics and structural equation path analysis. Results: The Self-Perceived Food Literacy Scale scores were negatively correlated with the Eating Behavior Patterns Questionnaire scores in patients with type 2 diabetes (β = −0.233; p < 0.05) and explained 5.4% of the variance in eating behavior. Additionally, the Self-Perceived Food Literacy Scale scores were negatively correlated with fasting blood glucose levels (β = −0.176; p < 0.05). The Eating Behavior Patterns Questionnaire scores were negatively correlated with the glycated hemoglobin A1c levels (β = −0.122; p < 0.05). Conclusion: The Eating Behavior Patterns Questionnaire scores, perceived food literacy, and fasting blood glucose levels explained 33.2% of the variance in glycated hemoglobin A1c levels. Food literacy and eating behaviors of Turkish patients with type 2 diabetes should be enhanced to improve glycemic control and lipid profiles.
