An investigation of histopathologic and morphometric effect of black carrot juice on acrylamid induced neurotoxicity

Abstract :Acrylamide is a substance known to have neurotoxic effects. It has high exposure due to its widespread use in the industrial field and its occurrence in foods. This situation has led the scientific world to identify natural components that can eliminate these effects of acrylamide. This experimental study was planned to examine the effect of black carrot containing high bioavailability flavonoids on the neurotoxicity induced by acrylamide. The rats used in the study were divided into 4 groups. Group 1 was used as a control group. Acrylamide was applied to the second group. Third group was formed the rats which black carrot was applied in addition to acrylamide application. Rats in the 4th group were given only black carrots. Biochemical, histopathological and histomorphometric analyzes were performed on rats that were sacrificed at the end of the experiment. Significant histopathological degenerations were observed in the acrylamide group. Although a volumetric decrease was observed in all brain regions examined histomothometrically, this decrease was not statistically significant. The MDA and GST levels of the acrylamide group showed a significant increase compared to the control group. It was observed that GSH, CAE and AChE levels increased in the acrylamide and black carrot group compared to the acrylamide group. The results of our research indicate that black carrot has healing effects on the neurotoxicity induced by acrylamide.
