Abstract :In order to provide additional nutritions to the agricultural plants, usually organic and Inorganic fertilizers are applied into the soils as indicated in many literatures. However, sometimes, the nitrates may accumulate in the plant tissues especially when inorganic nitrogeneous fertilizers are added into the soils in excess of the plant need. On the other hand, accumulation of nitrate in the plants may occur also through the excessive applications pesticides, indüstrial and municipal waste waters to the plants and soils in agriculture. In other words, agricultural plants may be polluted biochemically with the nitrates by the excessive applications of the nitrogenous chemical fertilizers, pesticides and the waste water to agricultural lands. Spinach, lettuce and parsley can be given as examples for the plants that may contain the accumulated nitrates usually grown under greenhouse conditions. Excessive application of the nitrogenous fertilizers, pesticides and waste waters to the plants and the soils may cause not only the plant (food) pollution but also the soil and ground water pollutions in agriculture.Keywords : Sebze, nitrat, nitrit, kirlilik.
