Abstract :Bu derlemede, glukosinolatların genel kimyasal yapılarına, adlandırılmalarına, bitkilerdeki dağılımına, parçalanma ürünlerine, içerik üzerine etki eden faktörlere, işleme ve depolama sırasında meydana gelen değişimlere, analiz yöntemlerine, sağlık açısından özellikle guatrojenik ve antikarsinojenik etkilerine değinilmiştir.
