Abstract :Ürünün, organoleptik niteliklerini geliştirmek amacı ile sucuklarda starter kültürler kullanılmaktadır. Starter kültür olarak, laktik asit bakterileri insert ignore into journalissuearticles values(L. plantarum, L. sake, L. curvatus, P. pentosaceus, P. acidilactici);, Micrococceae insert ignore into journalissuearticles values(S. carnosus, S. xylosus, M. Varians);, mayalar insert ignore into journalissuearticles values(D. hansenii);, Streptomyzeten insert ignore into journalissuearticles values(S. griseus); ve küf mantarları insert ignore into journalissuearticles values(P. nalgiovense); sucuklarda kullanılmaktadır.
