Abstract :Fermantasyon teknolojisinin gıda endüstrisindeki yeri son yıllarda uygulama alanına giren mikrobik protein, yağ, karbonhidrat, polisakkaritler, organik asitler, amino asitler, sentetik tatlandırıcı maddeler ve aroma maddeleri üretimi ile daha yaygınlaşmıştır. Gıda ve hayvan yemi olarak kullanılan mikrobiyel proteinin biyolojik değeri oldukça yüksektir ve maliyeti de ucuz olmaktadır. Mikrobik protein üretimi halen İngiltere, Fransa, Almanya, Çekoslovakya, Sovyet Rusya, Amerika Birleşik Devletleri ve Japonya’da bir endüstri dalı haline gelmiştir.
