Abstract :Turunçgil sularında acılık önemli bir sorundur. Naringin ve limonin acılık etmenlerinin en önemlileridir. Acılık etmenlerinin giderilmesinde değişik yöntemler kullanılmıştır. Bu derlemede turunçgil sularında görülen acılığın nedenleri ve giderilmesinde kullanılan fizikokimyasal ve biyoteknolojik yöntemler tartışılmıştır.
