Abstract :Peynir kurutma, peynirin raf ömrünü uzatmak, hacim azaltmak ve sanayide kullanımını kolaylaştırmak için bir çok Avrupa ülkesinde uygulanmaktadır. Bu çalışmada kaynaklarda yer alan bazı peynir kurutma metotları özetlenmiştir. Aynı zamanda kurutulmuş peynir ürünlerinin avantajları, dezavantajları ve kullanım yerleri hakkında kısa bilgi verilmiştir.
